The estate stands out in many ways.
First, its parcels extend across three villages—Pfaffenheim, Soultzmatt and Westhalten—covering a total surface of 1.35 hectares. Each plot is deliberately kept at a human scale (no more than 20 ares), allowing the vines to be worked exclusively by hand, as the human hand remains the most precise and sensitive tool.
All the estate’s parcels benefit from a rich and well-preserved macro- and micro-flora and fauna.
The plots in Soultzmatt are particularly historic, featuring terraces, dry-stone walls and even a small traditional hut. They are also impossible to mechanize.
The vineyards are farmed according to organic and biodynamic principles.
Treatments are limited to a maximum of five per year and consist solely of sulfur, decoctions, essential oils, infusions or herbal teas.
To highlight and respect the full range of nuances offered by each terroir, the winemaker insists on parcel-based vinification.
The estate uses no pre-fermentation yeasts and no added sulfites.
In other words, these are living wines, free of additives, offering great lightness on the palate and distinctive, atypical aromas.
